The average resveratrol concentration in red wines is about six-fold that in white wines.
In wines of the same variety, colour intensity and resveratrol content show similar tendencies.
Comparing winemaking practices shows that the resveratrol content of wines increases in proportion to the increased duration of fermentation on the skins.
Resveratrol is found primarily in skins and seeds of grapes f.e. muscadine grapes have about one hundred times higher concentration than pulp.
Fresh grape skin contains about 50 to 100 micrograms of resveratrol per gram.
